Recipe: Ginger Roasted Beets

chef marvin woodsI don’t know about you, but I love beets. If you don’t already know, beets are high in potassium, magnesium, fiber, phosphorus, iron, vitamins A, B & C, beta-carotene, beta-cyanine; folic acid and that’s just a few of the many vitamins and minerals that you can get from beets and beet greens. For this recipe, I chose to roast them so that I could add some additional flavoring.
