Pound cake, y’all!! Need I say more? Probably not, but I will say there is a lot of mmmm good flavor in these little cupcakes. This recipe, which I borrowed from my wife, has been adapted to be more chef-like, but only to really make it over the top. Lemon glaze and butter cream cheese icing complete the topping to make this a serious crowd pleaser. Now the only thing left to say is…

Ingredients
*Makes 12-14
Pound Cake
1 1/2 cups all purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1 cup (2 sticks) butter (soften at room temperature)
1 1/3 cups sugar (part of this is for the glaze at the end)
4 eggs
2 teaspoons vanilla extract
1/4 cup fresh lemon juice
Glaze
1/3 cup lemon juice (glaze)
1/2 teaspoon lemon zest
Icing
1/2 cup cream cheese
Turmeric (just a pinch)
1/4 cup butter (soft)
1/4 cup confectionary sugar
Directions
- Preheat the oven to 350 degrees.
- In a medium bowl, combine the flour, baking powder and the salt. Use a mixer with whisk attachments to cream the butter. Add 1 cup of the sugar and mix together. Lower your speed and incorporate one egg at a time into the mixture. Add the vanilla.
- Start slowly adding the flour to the butter mixture. Add the ¼ cup of lemon juice and the lemon zest and mix together until smooth.
- Pour the mixed batter into cupcake cups, filling to just above halfway. Place in the oven and bake for 15 minutes or until an inserted toothpick in the center comes out clean.
Lemon Glaze
While cupcakes are baking. Place 1/3 cup sugar and 1/3 cup lemon juice in a pan. Place over low heat and dissolve the sugar. Set aside. This will be brushed on the cupcakes when they come out of the oven.
Mix your icing ingredients together and top your cupcakes.
