1. Eggplant
Eggplant isn’t just good for helping you get your Italian fix with eggplant parmigiana. Eggplant’s meaty taste and texture makes it a versatile substitute for burgers, noodles and even fries.

2. Cauliflower
On its own, cauliflower may not have much flavor, but that’s what makes it a perfect meat substitute. With the right cooking method and seasoning, cauliflower can replace chicken in your favorite Asian dishes and other meals.

3. Beans
