Friendly Fried Rice

fried riceEveryone’s favorite side dish is Diet Free Life approved! Instead of using oil, the vegetables are tenderized with water and instead of a whole egg it’s replaced with egg whites. Add some shrimp, tofu, chicken or your choice of protein for the perfect fat-burning meal.

Ingredients
2 cups long grain brown rice, cooked
3 egg whites, slightly beaten
2 carrots, chopped
1 celery stalk, chopped
1 small onion, chopped (optional)
½ cup frozen peas
½ cup frozen corn
2 tbsp low sodium soy sauce
water (as needed)

Method:

Heat a wok or large frying pan to medium-high heat, cook the egg into an omelet. Remove the omelet and add the carrots, celery and onion.
