Everyone’s favorite side dish is Diet Free Life approved! Instead of using oil, the vegetables are tenderized with water and instead of a whole egg it’s replaced with egg whites. Add some shrimp, tofu, chicken or your choice of protein for the perfect fat-burning meal.

– 2 cups long grain brown rice, cooked
– 3 egg whites, slightly beaten
– 2 carrots, chopped
– 1 celery stalk, chopped
– 1 small onion, chopped (optional)
– ½ cup frozen peas
– ½ cup frozen corn
– 2 tbsp low sodium soy sauce
– water (as needed)–

Heat a wok or large frying pan to medium-high heat, cook the egg into an omelet. Remove the omelet and add the carrots, celery and onion.
