Ingredients
Caribbean Spice Rubbed Salmon
4 salmon fillets
1 teaspoon chili powder
1 teaspoon ground cumin
1/2 teaspoon allspice
1/2 teaspoon kosher salt
1/4 teaspoon ground cinnamon
1/4 teaspoon coriander
1/8 teaspoon cayenne pepperMango Salsa
1 large red mango (about 2 cups), peeled and diced
1/3 cup red onion, diced
3 tablespoons cilantro, chopped
Juice of half a lime
1/4 teaspoon chili powder
1/4 teaspoon kosher salt
Other Ingredients
1 cup uncooked quinoa, rinsed and cooked according to package instructions
If you don’t have quinoa, you can use brown rice
1 can black beans, rinsed and drained

Directions:

In a small bowl whisk together all of the spices for the salmon fillets.
Divide the spice mixture evenly between the salmon and rub it into the fish.
