Many have cooked and eaten chicken a variety of different ways, but when it comes to cooking chicken that moist, tender and juicy each and every time, that's where Chef Darius (@dariuscooks on twitter) is the expert!
"Did I ever tell you how much I love chicken? Well, this recipe is a great one – and you wouldn’t believe how simple it is," Darius says. "No, really – it’s so easy. You literally dump a bunch of herbs into a blender with some olive oil, salt and pepper. Then, you rub it real good on the chicken and under then skin. Then, you roast it – that’s it. Simple, right?"

Ingredients
1 roasting chicken
1 cup of fresh herbs (I used marjoram, basil, parsley, oregano, and cilantro)
1 tablespoon of Kosher salt
1/2 tablespoon of cracked black pepper
5 garlic cloves
1/2 cup of good olive oil
*a blender or food processor
Directions
- Preheat the oven to 375 degrees.
- Place the herbs, salt, pepper, and garlic into the blender. Drizzle in the oil with the motor running and blend until smooth.
- Rub all over the chicken, including under the skin.
- Roast in the oven uncovered for 1 hour or until the juices run clear from the thigh of the chicken.
