Banana And Apple Pancakes
Ingredients
3 bananas
1 apple
6 small eggs
1 tbsp coconut oil
Honey (optional)
Preparation
- Peel and mash the bananas in a mixing bowl.
- Core the apple and grate it into the banana mixture.
- Crack the eggs into the bowl and mix the ingredients.
- Heat a frying pan and add a small amount of coconut oil into the pan.
- Use a spoon to drop the mixture into the pan. Use the back of the spoon to flatten the pancakes so that they are thin and round.
- Allow the pancakes to cook for a minute, or until they are golden brown on one side and easy to turn over using a spatula.
- Turn and allow to cook for another minute until the second side is also golden brown.
- Once cooked remove from the pan and continue to cook the rest of the mixture in the same way.
- Once removed from the pan you can stack the pancakes on a plate to keep them warm.
- Serve with honeyif desired, or just eat them plain if you are sugar free.
Fruit and Vegetable Smoothie
Ingredients
1 banana
A handful of blueberries
A handful of kale
100 mL coconut milk
100 mL water
Preparation
- Put all the ingredients into a blender and blitz together for 30 seconds.
- You can change the ratio of coconut milk/water if you want.
Healthy Eggs
Ingredients
1 or 2 eggs
2 oz salmon canned in water, drained
1/3 avocado, cubed
Preparation
Scramble eggs and then top with salmon and avocado.
Overnight Oats
Ingredients
½ cup old-fashioned oats
½ cup milk
¼ cup yogurt (optional)
1 tsp pure vanilla extract
2 tsp honey or maple syrup (optional)
Preparation
Combine all the ingredients in a mason jar, cover, and refrigerate overnight.
Baked Apple
Ingredients
¼ tsp cinnamon
1 tsp canola oil
2 tbsp old-fashioned oats
1 tsp brown sugar
1 apple, cored

- Preheat oven to 350 degrees F.
- Mix together the cinnamon, oil, oats, and sugar.
- Stuff into the apple and bake about 45 minutes, until cooked through.
- Eat everything but the skin, which is high in fiber and not always well-tolerated.
Lactose-Free Yogurt Parfait
Ingredients
Lactose-free yogurt
Bananas
Papaya chunks
Nut butter (optional)
Preparation
- In a glass, layer one container of lactose-free yogurt, such as coconut yogurt.
- Alternate layers with banana slices and papaya chunks.
- Top with 1 tbsp. smooth nut butter of your choice .
Peanut Butter Crunch Balls
Ingredients
1 cup puffed rice
¼ cup smooth peanut butter
½ tsp. Vanilla
¼ cup honey
¼ cup powdered peanut butter

- In a large bowl, combine the puffed rice with the peanut butter.
- Add vanilla, honey, and powdered peanut butter.
- Roll mixture into balls and store in the refrigerator.
Nutty Banana Slice
Ingredients
1 banana
1 tbsp peanut butter
Unsweetened coconut flakes
Additioal toppings
Preparation
- Slice a banana in half, lengthwise.
- Spread each side with 1/2 tbsp. peanut butter.
- Sprinkle with unsweetened shredded coconut and other preferred toppings.
Tiny Antipasti Skewers
Ingredients
Black or green olives
Cherry tomatoes
Basil
Prosciutto
Olive oil
Cracked pepper
Preparation
- Thread black or green olives, cherry tomatoes, basil, and prosciutto onto toothpicks.
- Drizzle with a touch of olive oil and sprinkle with freshly cracked pepper.
Tuna Cucumber Bites

Red bell peppers
Carrots
Turkey
Preparation
- Slice zucchini, red bell peppers, and carrots into matchsticks.
- Roll 3 slices of turkey around veggies and eat!
Living with Crohn’s disease calls for eating well. It’s helpful to have a few go-to recipes that you can get done easily.
