It’s seems as though everywhere you turn, you hear “Keto-this” and “Keto-that.” It is definitely the diet of choice nowadays. So there are some foods that people have changed or adapted to fit the keto diet and this one from Darius Cooks make me so glad he did! Check out the southern favorite, fried chicken, but with a keto twist! He even included a video (You’ll notice in the video that I used a combo of coconut and almond flours. But, straight almond would work JUST as well).
Ingredients:
1 whole chicken, cut up
1 cup of buttermilk
1 tablespoon of Kosher salt
1 teaspoon of black pepper
1 package of Sazon
1 teaspoon of red pepper flake
1/2 teaspoon of dried fennel
1/2 teaspoon of dried Italian herbs
1/2 teaspoon chili powder
1/2 teaspoon garlic powder
1/2 teaspoon of onion powder
1/2 teaspoon Cajun seasoning
1 cup of coconut flour
2 cups of almond flour
Peanut oil, for frying
Directions:
Start by combining the chicken and buttermilk in a bowl. Let it sit for a few minutes.
Then, add in all the seasonings. Mix well, to ensure all the chicken is coated with the seasonings. Then, add in the flours and…
…dredge thoroughly. Be sure to shake off all of the excess flours.
Heat the oil to 360 degrees. Then, add in the chicken and fry on both sides until golden brown. Drain off all of the excess oil with paper towels and then you can serve while the chicken is still warm.
