Chicken & Sweet Potato Tacos
(With Lime Crema)
Ingredients
1 rotisserie chicken
1/2 cup of shredded purple cabbage
A few sprigs of cilantro
1 lime, for a garnish
1 jalapeno, thinly sliced
1 cup of lime crema (recipe below)
Cotija cheese (look in the Latin section of the refrigerated aisle in the grocery store)
Latin Spiced Grilled Sweet Potatoes (recipe to follow)
A few corn tortillas, toasted
Latin Spiced Grilled Sweet Potatoes
2 sweet potatoes, peeled and cut into wedges
2 tablespoons of olive oil
1 tablespoon of taco seasoning (store bought or use my recipe here)
Directions
1. Preheat the oven to 400 degrees.
2. Combine all ingredients well in a bowl.
3. Place on a grill pan and roast in the oven until crispy on the outside and tender on the inside.
Lime Crema
It’s so easy, you don’t even need a recipe: just mix a few teaspoons of light sour cream with the juice of a lime and a splash of milk. Throw in a pinch of salt and pepper and mix well to combine.
Now, just assemble your tacos. Here’s how Darius likes to get down: “I used toasted corn tortillas, piled them high with chicken, grilled sweet potatoes, cilantro, lime, red cabbage, a few slices of jalapeño, and a bit of Cotija cheese.”
