Massy Arias, the woman behind MankoFit, rose from social media fitness inspiration to working out the crowd of “Good Morning New York.”
Her Instagram feed is full of intense workout videos and hearty meals, so you can easily save them for recipe and exercise inspiration later. One thing that stands out about this mom’s feed is the endless options of hearty, healthy meals like salmon cakes with a side of sweet potato fries and asparagus, fluffy berry pancakes, and curry-spiced turkey roll-ups, to name a few.
Here’s Massy’s recipe for French toast:
Ingredients
3 slices whole grain bread
2 whole eggs
2 tablespoons almond milk
Cinnamon powder to taste
100% organic liquid Stevia to taste (she uses Trader Joe’s brand]
Directions
Preheat a nontoxic/nonstick pan in medium heat setting. Mix all ingredients together but the bread. Then soak bread slices in the mixture. Finally, spray coconut oil onto pan and cook each slice for a few minutes until golden brown.

Below is Jeanette’s take on the organic veggie omelet.
Ingredients
½ cup Eggology egg whites
½ cup mushrooms
½ cup red and yellow peppers
½ cup grape or cherry tomatoes
½ cup spinach
1 lemon juice from fresh whole lemon
1 teaspoon Himalayan salt
1 teaspoon pepper
Directions
Steam/Sauté with water the mushrooms, red peppers, and spinach in a saucepan. Set the cooked items to the side.
In a clean pan lightly melt coconut oil to avoid sticking on medium to high heat. Once the oil is melted and the pan is hot, add the egg whites and cook until all transparency is gone and egg white is solid. Next, add a dash of Himalayan salt and pepper for additional flavor. Then flip to lightly brown both sides.
Remove omelet from the pan and fill the omelet with the sautéed mushrooms, peppers, and spinach and add raw tomatoes.
Add a side salad to the side of your plate with 2 cups of mixed greens, 4-5 grape tomatoes, and 1/4 sliced avocado. Then top salad off with freshly squeezed lemon or your favorite balsamic or low-calorie dressing for additional flavor.
