GINGER ROASTED BEETS
SERVES 4-6
Ingredients
6-8 large beets about 2 inches in diameter
1 tablespoon fresh ginger, minced
2 oranges
2 teaspoons agave or honey
1 tablespoon butter
1 teaspoon salt (sea or kosher)
1/2 teaspoon black pepper
Directions
- Heat oven to 400F.
- Cut away bottoms of beets and wash the outsides under cold running water.
- Cut beets in quarters. Place beets and ginger in a bowl.
- Cut oranges in half and squeeze the juice in the bowl over the beets.
- Add agave, butter, salt and pepper.
- Mix the ingredients and place in a roasting pan.
- Cover and cook for 45 to 50 minutes.
- Serve and ENJOY!
