For the tropical salsa, combine all ingredients in a bowl and chill until you’re ready to use.
For the lime crema, combine all ingredients in a bowl and chill until you’re ready to use.
For the fajitas, heat a pan and add the olive oil. Then add the pineapple and red onion and saute until tender. Meanwhile, season the chicken tenders with the Jerk seasoning and let them marinate for a few minutes.
Meanwhile, add the rum and water to the pan and scrape the pan to get the bits off the bottom from the saute of the red onion and pineapple. Reduce the heat a bit and add the chicken tenders. Cook until the chicken had cooked through and then garnish with the lime crema and scallions. Serve with the tropical salsa and corn tortillas.
