Well, it kinda doesn’t get any more southern than sweet tea, right? This glaze is INSANE and works well with other protein. But, there’s just something grand about salmon and lemon – along with honey and brown sugar…it kinda just works. Enjoy!
Ingredients
(for the sauce)
2 cups of water
1 tea bag (I used black tea)
2 tablespoons of brown sugar
2 tablespoons of honey
the juice of 1 lemon
(for the fish)
4 salmon fillets
salt and pepper, to taste
1 tablespoon garlic powder
1/2 tablespoon of olive oil
Directions
1. In a sauce pot, bring the water to a boil and add the tea bag. Let the tea bag steep in the water for 45 seconds. Swish it around good so the water is infused with the tea.
2. Then, add in the brown sugar, honey, and lemon juice. Cook this on medium heat until it reduces to a syrup. This takes about 5 minutes. Watch closely so it doesn’t burn.

4. Get a cast iron skillet hot on the stove, then add in the oil. Add the fish SKIN SIDE DOWN. Let it cook for about 1 1/2 minutes – 2 minutes and the flip it with tongs.
5. Brush the fish with the sweet tea glaze and then put it in the oven to finish cooking through. Cook to your desired temperature.
6. Remove the fish, plate it, and give it a good squeeze of lemon before serving!
