Directions
Simple Syrup: Place ingredients in small saucepan and bring to a boil; remove from heat. Let steep for 10 minutes, then strain into bowl and refrigerate until ready to use.
Fruit Salad: Cut the top off the pineapple and using a paring knife, core out inside of pineapple, making a bowl for the fruit salad. Dice the pineapple and toss with other fruit. Toss with simple syrup, place into pineapple bowl and garnish with mint.
