Want something quick, easy, light, but filling?? Wrap your mouth around this penne pasta dish with a little kick from Chef Darius (@DariusCooks on twitter)!
Ingredients:
-1 pint of grape tomatoes
-1 teaspoon of Kosher salt
-1 teaspoon of pepper
-1 teaspoon of minced garlic
-1/2 teaspoon of oregano
-3 tablespoons of olive oil
-1 teaspoon of sugar
-1 teaspoon of red pepper flakes
-1/4 cup of minced onion
- 1/2 pound of Penne pasta, cooked and drained
*basil & Parmesan cheese for garnish

Directions:
1. In a medium pan, heat olive oil on high heat.
2. Saute onions and garlic until fragrant.
3. Season with salt, pepper, red pepper flakes, and oregano.
4. Add tomatoes and saute until tomatoes start to cook down. They should begin to release their juices. This should take about 6-7 minutes.
5. The mixture should be a bit saucy as this point. Stir in sugar and taste. Add salt and pepper, if necessary.
6. Toss with cooked pasta and garnish with basil and Parmesan cheese.
