During the summer most of our appetites start to dwindle. It could be our body’s natural craving for more water to keep us hydrated or our own self-conscious telling us not to eat as much or we won’t look good in our bathing suit. Either way, here’s a great recipe when you want to feel full, not stuffed and won’t add too many calories to your day.

It’s called “Super” because its super simple. Just a few ingredients and bam! You’re done!
It’s called “Summer Slim” because of the light nature of the dish.
Here’s what you need to make it happen:
Ingredients
1 Summer squash
1/2 cup of smoked or grilled sweet red pepper
2 cups Leftover white rice
1 egg, beaten
1 cup Sliced scallions
Splash of oyster sauce
1 tablespoon Chopped fresh basil
Directions
1. Cut summer squash into thin matchstick size. They can be the size of shoe string french fries as well.
2. Dice red pepper into small pieces (If you don’t have to time have grilled red pepper, simply put one whole red pepper over a stove burner until charred. Rinse completely, then chop).
3. Pre-heat pan with garlic oil. If you don’t have any, simply chop one clove of garlic and sautee in olive oil until garlic is soft.
4. Stir-fry matchsticks of summer squash and sweet red pepper with leftover white rice, beaten egg and sliced scallions until peppers and scallions are soft. Splash with oyster sauce and sprinkle with chopped basil before serving.
