1. Miso Peanut Salad

Ingredients:

  • 1/3 cup white miso

  • 1/3 cup mirin

  • 1/3 cup rice vinegar

  • 1 tbsp grated ginger

  • 1/2 cup chopped roasted peanuts

  • 5 tbsp canola oil

  • 2 blocks (14 oz each) firm tofu, drained

  • 8 cups salad greens

  • Chives (optional)

Directions:

  1. Whisk miso, mirin, vinegar, ginger, peanuts, and oil.

  2. Slice tofu and press it to remove excess moisture.

  3. Pan-fry until golden and crispy.

  4. Serve over greens with miso dressing and extra peanuts.

2. Crispy Stir-Fry

Flavor Profile: Savory and slightly spicy.
Best For: Weeknight dinner.

Ingredients:

  • 1 block extra-firm tofu

  • 2 cups broccoli florets

  • 1 red bell pepper, sliced

  • 2 tbsp soy sauce

  • 1 tbsp hoisin sauce

  • 1 tsp sesame oil

  • 1 tbsp cornstarch

  • 2 tbsp vegetable oil

Directions:

  1. Cut tofu into cubes, toss with cornstarch, and pan-fry until crispy.

  2. Stir-fry veggies in sesame oil, then add sauces and tofu.

  3. Serve over rice or noodles.

3. Miso Soup

Ingredients:

  • 1/2 block silken tofu, cubed

  • 3 cups vegetable broth

  • 2 tbsp white miso

  • 1 sheet nori, cut into strips

  • 1 green onion, sliced

Directions:

  2. Add tofu and nori; heat gently.
